Marinated Bean Salad

Bean Salad


  • 1 can chickpeas, drained and rinsed
  • 1 can white navy beans, drained and rinsed
  • 1/4 red onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 bunch fresh parsley, finely chopped
  • 2 tbsp Olive oil
  • 2 tsp Lemon juice
  • 2 tsp dried Oregano or Italian seasoning
  • To taste Salt and pepper



  • Combine all ingredients in a large bowl and gently stir to mix.
  • Cover and refrigerate 1-2 hours before serving.
  • The longer you allow it to marinade the more flavorful it will be
