Red Wine Risotto w/Pork sausage and peas

Red Wine Risotto w/Pork sausage and peasChorizo-Red-Wine-and-Pea-Risotto

Ingredients

Risotto

  • 2 tbsps olive oil
  • 1 onion, minced
  • 500 gms Arborio rice, soaked
  • 1 glass red wine
  • 1 ltr chicken stock
  • 2 pork sausages, sliced
  • 100 gms green peas
  • 1/3 cup parsley, chopped
  • Salt & pepper to taste

Veggies

  • 1 tbsp olive oil
  • 1 tbsp garlic, finely grated
  • 1 tsp thyme
  • 100 gms mushroom, sliced
  • Salt & pepper to taste

Instructions

Risotto

  • Sauté the onion in olive oil.
  • Put in the soaked rice and stir fry with onion.
  • Add glass of red wine.
  • Add chicken stock and let it simmer. Bring chicken stock to simmer in different pan before adding to the rice.
  • Add sausage and green peas. Fry the sausage in different pan before adding to the rice.
  • Add parmesan cheese and stir well.
  • Add salt & pepper.
  • Add chopped parsley.

Veggies

  • Heat the olive oil.
  • Sauté the finely grated garlic & thyme.
  • Add sliced mushroom and stir fry.
  • Add salt & pepper.

Garnish risotto with sausage oil & parmesan. Serve with sautéed mushrooms.
