Pasta w/vegetables & tomato sauce



Tomato sauce

  • 4-5 ripe tomatoes
  • 1 onion, finely chopped
  • 2 tbsps garlic, minced
  • 1 ½ tbsps olive oil
  • 2 tbsps tomato ketchup
  • ½ tsp oregano powder
  • Salt & black pepper, according to the taste


  • 1 onion, chopped
  • 1 tbsp garlic, chopped
  • 10-12 bite sized florets of broccoli
  • 1 cup of capsicum, chopped
  • ½ tsp oregano powder
  • 1 ½ tbsps olive oil
  • Salt & black pepper, according to the taste

*Add mushrooms if you like

Pasta (Penne, recommended)

Parmesan cheese, grated



  • Add pasta to boiling water.
  • Let it boil till its al dente.

Tomato sauce

  • Boil tomatoes for 5 minutes.
  • Remove the skin & puree.
  • Heat oil, fry garlic & onion till they become soft.
  • Add tomato puree, ketchup & bring to boil and then simmer for another 10 minutes.
  • Add oregano, salt & pepper.


  • Put broccoli in boiling water for 3-4 minutes. Drain the water and keep it aside.
  • Heat olive oil; add finely chopped onion and garlic and sauté till onions become light pink.
  • Add broccoli, capsicum and cook for a few minutes in high flame. Keep stirring it continuously. Do not overcook. The vegetables should be crisp.
  • Then sprinkle a little oregano, add salt & pepper to taste.

Add sautéed veggies and boiled pasta to the sauce, toss it well, garnish with grated cheese and serve hot.
